Meatless Monday Recipes: Spicy Noodles

This week’s Meatless Monday recipe has an extra kick to it – we’re making Spicy Noodles. Read on for an easy vegetarian dinner idea:

Serves 2

Ingredients:

Vegetable oil

200g egg noodles (you can use fresh or dried)

1-3 red chilies, finely chopped and de-seeded (one for mild, two for medium, three for spicy!)

Half a yellow pepper

Half a green pepper

Half an onion

2 garlic cloves

1) Chop or crush the garlic and cut the peppers into strips, Finely chop the chilies, removing the seeds

2)Cook the noodles according to the instructions on the pack. Drain and set aside

3) Heat the vegetable oil in a pan, then add the garlic and onion and cook until soft

4) Add the chilies and peppers to the pan and cook for 2-3 minutes

5) Add the noodles to the pan and then cook until warmed through. Serve!
