This week’s Meatless Monday Recipe is an easy option for lunch or dinner.
One pack of chilled, ready made, shortcrust pastry
1 green pepper
A small handful of chopped parsley
A small amount of butter, for frying
1) Chop the onions and fry in the butter until soft
2) Chop the carrot and green pepper into small cubes and add to the onions. Allow to cool and then add the cheese and parsley.
3) Cut the pastry into four squares and place a little of the filling in the middle of each. Brush the edges of each square with a little beaten egg and then draw together to make a ‘parcel’ shape.
4) Make a small hole in the top of the parcel and then brush the outside with the beaten egg. Place in the oven for around 15 minutes. Check it is hot all the way through, then enjoy!
