Meatless Monday Recipe: Raw Veggie Platter

This is one of our favourite Meatless Monday recipes – in fact, it’s so simple we’re not even sure it qualifies as a recipe, but it’s one the fastest and easiest vegetarian dinner suggestions we’ve come across, and kids love it too!

Simply grab a selection of the crunchiest and most colourful veggies you can find – we like capsicums/peppers, carrots, radishes, cucumber, broccoli, baby corn, cherry tomatoes, and aparagus. Wash well and cut up, then serve with a selection of tips – hummus is a great and filling choice, and many supermarkets now offer a variety of exciting flavours – or you can make your own instead.Spicy salsa also goes well with the fresh veggie flavours.
